A textural and complex example of this variety, Modest sweetness (10 gms/ltr) is well balanced with ripe pear, shortbread notes and subtle caramel on the nose. Dried apple and fig characters marry with creamy vanillan oak undertones.
Oak and Stainless steel fermentations.
The Pinot Gris goes well with oilier fish such as Salmon or Tuna. Also try it with roasted pork, baked ham or smoked chicken alfredo.

Brennan Pinot Gris block and ‘the rogues'. The Brennans planted Pinot Gris on the lower flats of the home block over fifteen years ago. A few rogues exist amongst recent Pinot Noir plantings on the higher terrace offering further fruit complexity due to the extra elevation and leaner soils. The home block is used to source fruit for both the Brennan Pinot Gris and Brennan Pinot Grigio however the vines are treated quite differently. Cropping on the fruit destined for Pinot Gris is kept low and picked later to allow full flavour development in the fruit.
The first press was sent directly to oak for a full solids barrel ferment. The remaining juice was settled and racked, one further barrel filled leaving approximately 500 litres for stainless steel fermentation. The portions were both fermented cool and received generous lees stirring. Barrels were inoculated with malo-lactic bacteria to provide a creamy textural component to the wine. The barrel fraction remained in oak for 10 months when the wine was blended. A light skim milk fining was followed by a sterile filtration before bottling.
